Mexican Lasagne

I was think the other night i hadn't tried a new recipe for dinner in a few week so while looking thought Nigella's site I found the recipe for  Mexican Lasagne I remembered seen her make this on one of her programmes and thinking it looked interesting, So I decided to have a go. I changed 1or 2 things to suit what I had in stock.

I used 2 tins of kidney beans.
I defrosted frozen sweetcorn, I can't stand the tinned stuff. I find it way to sweet.
I only used 1 tin of water and the cheese I used was a bag of grated Mozzarella and Cheddar.


You start by making the sauce, it takes about 30 minutes. While the sauce is simmering you mix the beans, sweetcorn and cheese together.
Heat the oven, 180 Fan


The packet of tortillas I had in my press fitted my dish perfectly so I didn't need to overlap the bottom layers.

Put some sauce in the bottom of the dish, cover with a tortilla or 2, a layer of bean, sweetcorn and cheese mix. Add a layer of sauce. Top with tortilla.
Work up in layers until you use up all the bean mixture.
Finish with a tortilla. spread the last of the sauce and sprinkle with the last of the cheese.
Bake for 30 minutes,  leave to stand for 10 minutes before cutting into wedges.


Serve with salad.

I have to say this was a big hit with my Husband. I have been asked twice when was I making it again. I enjoyed it more than I do traditional vegetarian lasagne. It was lighter.
Defiantly going to be a regular meal in my kitchen
