Pancakes

These little pancakes are lovely for breakfast. They go down very well in my house. Most times they are made you have to stop people making off with them straight from the pan.


150g plain flour
50g caster sugar
2 tsp baking powder
1/4 tsp bicarbonate of soda
150ml milk
25g melted butter
2 eggs

Put all the dry ingredients in a bowl. Whisk milk, eggs and melted butter together.
Pour the wet mix into the dry mix and beat until you a smooth batter.

Heat a fry pan on a medium heat and rub a dot on butter  into the pan to stop it sticking.
Place 3 large tablespoon of batter on the pan.
Cook for a minute or 2 until bubble appear on the top and golden on the bottom.
Turn over and cook for another minute or so until golden brown.

In our house we like them with a squirt of lemon juice and a dusting of sugar.
You can mix 75g of fruit into the batter before cooking.
Dried fruit or blue berries work well.

You can also freeze them.
Pop into the toaster or under the grill for a quick breakfast.
