September Catch Up



Have been quite busy this month trying to get into some sort of a new routine. Dinner time has moved by about an hour so I find myself getting distracted and then rushing. I am also trying to be more economical with the water. Water charges are coming in here in January. So if I can develop some good habits now it will be easier. The husband has been complaining about the ESB bill so I am trying to be good and do my baking at the same time as cooking dinner.

 I bought some new books
These are the shortbread and marzipan biscuits from The Great British Bake Off book. Think I need to turn down the heat a bit to stop them leaking

 I had a go at making marshmallows. They turned out great. I am not adding the picture of the kitchen covered in icing sugar.

THE ALLOTMENT







 I have been spending time sorting out the allotment . The weeds took over a bit, well a lot. I think I have it sorted. It looks better than it did. I dug up the last of my potatoes last Friday. It is annoying the hell out of me to have to buy them now. I have been having home grown since June.

Fridays harvest.


The rhubarb for these came from my Mother-in- Laws garden. She was going to throw it out becaues it was not red. It just needed a bit of extra sugar.

I Only Went For Coffee.

On Saturday mornings my Husband and I go out foe a coffee.  one of the places we go to is  Orchard Home & Garden in Celbridge. I have said I would not buy any expensive plants due to the way the weather has turned out over the last 2 winters.
But I fell in love. Isn't she beautiful and smells gorgeous too.






They do lovely scones with homemade jam.

Pancakes

These little pancakes are lovely for breakfast. They go down very well in my house. Most times they are made you have to stop people making off with them straight from the pan.


150g plain flour
50g caster sugar
2 tsp baking powder
1/4 tsp bicarbonate of soda
150ml milk
25g melted butter
2 eggs

Put all the dry ingredients in a bowl. Whisk milk, eggs and melted butter together.
Pour the wet mix into the dry mix and beat until you a smooth batter.

Heat a fry pan on a medium heat and rub a dot on butter  into the pan to stop it sticking.
Place 3 large tablespoon of batter on the pan.
Cook for a minute or 2 until bubble appear on the top and golden on the bottom.
Turn over and cook for another minute or so until golden brown.

In our house we like them with a squirt of lemon juice and a dusting of sugar.
You can mix 75g of fruit into the batter before cooking.
Dried fruit or blue berries work well.

You can also freeze them.
Pop into the toaster or under the grill for a quick breakfast.

Dug up Dinner

 Ran into the allotment this morning to dig up dinner.
plenty of potatoes

chard, carrots, a small celery and rhubarb.
The allotment is starting to look very over grown. it doesn't take long for the weeds to run amuck.
I think I have a bit of sorting out to do
